Reunion Recipes
Here are a few recipes from the goodies at the Reunion:
Exotic Turkey Salad (Una)
I usually roast a hotel style turkey for this. The proportions don't seem to matter,
but I'll give them anyway.
4 cups cooked turkey, diced
10 ounces water chestnuts, sliced
1 cup celery, chopped
1 pound seedless grapes (may substitute pineapple chunks)
1 cup slivered almonds
1 cup mayonnaise
1 1/2 teaspoons curry powder
1 tbls soy sauce
1/2 tsp lemon juice
small can Mandarin oranges (optional)
Combine all ingredients. Serve on lettuce or in sandwiches.
Serves 8-10
Walnut Glory Cake (Jenni)
3/4 c. sifted all-purpose flour
2 t. cinnamon
1 t. salt
9 eggs, separated
1 1/2 c. sugar
2 t. vanilla
2 c. (8 oz.) finely chopped walnuts
Sift flour with cinnamon and salt.
Beat egg whites in large mixing bowl until soft mounds form. Gradually
add 3/4 c. sugar. Continue beating until very stiff, straight peaks form. Do
not under beat.
Combine egg yolks, 3/4 c. sugar, and vanilla in small mixing bowl. Beat
until thick and lemon-colored. Fold batter gently but thoroughly into egg whites,
using wire whip or rubber spatula. Fold in nuts.
Turn into ungreased 10-inch tube pan. Bake at 350º for 55-65 minutes.
Invert immediately. Cool completely before removing from pan. Sprinkle
with powdered sugar or glaze with chocolate.
